Vegan Black Rice & Quinoa Sushi

Absolutely LOVED this dish because it put me out of my comfort zone making a new cuisine that can be a little more tedious than just a salad or stir-fry! But once you get the hang of it, it becomes easier and quicker!

Sushi has got to be one of my all time favourite foods. If I’m ever shopping at the mall or need a snack when I’m out and and about, it would be one of my first choices. However, I try not to spend much money on takeaways and dining out, as well as the food being very rich (health-wise) to what can be make at home. I do love re-creating my own versions of my favourite treats and adding a creative twist!

I have made this super easy by using microwave 2 minute rice packets, however you can also substitute it for uncooked rice and boil it on the stove instead. I also used pre-marinated tofu with Korean BBQ, but you can use any flavour you like.

Ingredients

  • 500g Rice (I used a brown rice and quinoa mix, as well as a black rice mix)
  • 1/4 Cucumber thinly sliced
  • 1/3 Capsicum thinly sliced
  • 200g Marinated Tofu (I used Korean BBQ)
  • 4 Sheets of seaweed
  • 1 1/2 Tbsp Apple Cider Vinegar
  • 1 1/2 Tbsp Soy Sauce
  • 1 Tbsp Maple Syrup

Instructions

  1. Cook the rice according to instructions on the packet. Once ready, set aside to cool. The brand I used was Sun Rice.
  2. Cook the tofu in a pan until heated through and slightly golden. The brand I used was Bean Supreme (Peking & Korean BBQ are awesome)
  3. Thinly slice the cucumber and capsicum lengthways and set on a chopping board ready to piece together.
  4. Mix the apple cider vinegar, soy sauce and maple syrup into the rice.
  5. Lay the first sheet of seaweed on a large chopping board and spread with rice, leaving a bare strip on one end. Dribble water onto the strip to allow it to stick. Place the filling on one end then roll up tightly. Slice gently with a sharp knife into bite-sized circles. There are a number of videos on YouTube to show you step by step how to do this.
  6. Repeat until you use all of the ingredients up! This should make approximately 4 rolls.
