Breakfast Stir-Fry

I love having savoury foods for breakfast that not many people would think to make! Stir-fry’s for anytime of day are such a great choice because you can mix and match the carbs, veggies and protein that you have in the pantry! A great way to provide your body with energy and nourishment.

This one is super quick because the lentils were already soaked, and air-fryer tofu is to die for.

This dish kept me feeling satisfied for half a day!

Breakfast Stir-Fry

Serves: 1 Prep Time:

Ingredients

  • 1 tsp Cocavo Oil
  • 1 c Lentils (soaked or canned)
  • 1 Portobello Mushroom
  • Handful of Spinach
  • 1-2 Tbsp Nutritional Yeast
  • 1-2 Tbsp Pumkin Seeds
  • BBQ Sauce
  • Sticky Chilli Ginger Sauce (I used Marions Kitchen)
  • Air-Fried Tofu

Instructions

  1. Place the tofu in the air-fryer and lightly spray with oil or drizzle with flavouring of your choice.
  2. Cook the lentils, mushroom and spinach in the pan until wilted. Add the nutritional yeast and pumpkin seeds.
  3. Mix through the sauce.
  4. Place lentil mix into a bowl and decorate with fresh herbs or I used ‘Cheezoning’.
